The grapes are left to ferment on the skins in truncated cone shaped oak vats

Pumpovers were used to get the native fermentation going strong

2022 The Ojai Vineyard Pinot Noir Santa Barbara County, California Egon Muller Riesling Gold LayenVarietal Blend: Pinot Noir Vineyard Area: Bien Nacido 40%, Puerta del Mar 29% and Kessler Haak 20%, and Peake Ranch 11% Soil: Varying soil types, from sandy, clay loam, alluvial to chalky and gravelly Vinification: About 10% whole cluster inclusion depending on the vintage, open top fermentation with regular pump overs. Maturation: 14 months in French oak barrels (20% new)
