Distilled primarily from Folle Blanche with some Ugni Blanc
Fio is Portuguese word for ‘wire’ or ‘thread’ and this wine is the connection
In the cellar we simply poured the clusters into one-ton open-top fermenters and waited a few days for signs of activity
only with selected neutral yeasts
After bottling we decided to save the wine another 18 months in the cellar
2023 Henri Germain Bourgogne Cote d'Or Blanc, Burgundy, France Hungary Distilled primarily from Folle BlancheThe Bourgogne Cte d'Or is drawn from five different plots (four in Meursault and one in Chassagne) amounting to 1 hectare. In Meursault, they are "Les Lameroses", "Les Pacriots", "Les Belles Ctes", "Les Herbeaux" and "Au Jardin." In Chassagn Montrachet, it is "Les Grandes Corves." Soil: Clay limestone Exposure: East Southeast Vinification: Manual harvest, no added yeasts or enzymes, very rarely any btonnage, no racking, cold and very slow
